Ciudad de Oaxaca Mexico One of Oaxaca city ’s most vibrant and diverse cultural aspects is its cuisine. Thanks to its variety, richness, imaginative use, and laborious preparation, the dishes identified with this state are unquestionably some of the most exquisite in the country.
The most notable aspect of Oaxacancuisine is its variety of moles. Oaxaca is known as the birthplace of the Seven Molesand has the greatest variety including negro(black), colorado(colored), coloradito(little colored), chichilo, verde(green), amarillo(yellow), and manchamantel(lit. 'Stain the tablecloth').
In Oaxaca, it seems like there’s always a celebration going on somewhere. On the TehuantepecPeninsula they celebrate the popular vigils or "velas".
